wow! such a complex yet simple conversation starter......
Some say that it must be only biodynamic....some say only natural yeast....some say no additives but doesn't have to biodynamic - well you get my point - there are many camps. For us, it is simply:
* the grapes must be grown with thought and care - by vignerons / farmers who farm without chemical intervention. Only organic and/or biodynamic (thus the no chemical intervention part)
* alcohol must be a result of a natural fermentation - no yeast that was created in a lab: only the yeast that bloomed naturally on the grape
* absolutely must tell of the place where it was born - vivid, authentic, alive -pure!
